>Food – wonderful food!

>My garden is still supplying us with food, mostly because I’m not a real cabbage lover so I have not picked many of the heads yet. They keep on growing! The broccoli is loving this cooler weather and is producing many sweet florets for us. I have a few patches of lettuce that are struggling along as well.

Danni is a big help in the kitchen! She writes down – in her own special cursive writing- the recipes as I go along. I told her that’s good because when I’m dead she’ll be able to make the food. She just looked at me. Then I said, but that won’t be for a long long time, she said, “yeah, because you’re not old like dad is.” Poor kid has no concept of time!
Anyway with all the great vegetables I had from my garden the the last farmer’s market I thought I would throw together a lasagna. Since I am making my own noodles – most of the time- I went for the easy way with the lasagna….

Instead of cutting it down I just used it as a blanket… worked out pretty well!
It gave me a chance to use some of a huge gallon dented discounted can of organic tomato paste…
I guess we’ll have to make spaghetti to use it all up! Tomato past goes a long way.
It was a good meal! I cooked it under foil for about an hour and a half at 250. I like not having to boil the noodles, they cook perfectly.

Dessert was apple strudel. I got a bite. I had cut up two of them to take to some people I visited yesterday afternoon. I had forgotten to hide or put a note on the rest, so it was gone before I got back. Luckily the piece I put aside to photograph was left alone, so Bill got to have some. A neat trick I found with the strudel is to mix bread crumbs with a little sugar and sprinkle it on the buttered layers of filo dough. I do 5 layers for a strudel. I make them on a towel so they roll up easier. They are so fragile! The bread crumbs absorb the juices from the fruit and make the dough crispier.

I prepared my jelly roll pans by buttering them, then putting wax paper on them, then buttering that – that way the cake comes out of the pan easier, and the wax paper comes off the cake easier.
The Pan de Muerto goes like this:
Mix
1 1/2 C flour
1/2 C sugar
1 tsp salt
1Tbls Anise seed
2 Tbls (packages) dry yeast
then combined in a sauce pan
1/2 C milk
1/2 C water
1/2 C butter
heat until warm and butter is melted
Mix the dry and the liquid then add 4 eggs and 1 C flour and beat.
Gradually add in another 3 1/2 C flour – you may need to knead the last cup or two.
let rise until double.

to know how to make the shapes. It’s not in English, but it’s easy to follow!
Let rise for another hour.
bake at 350 for 40 minutes.
Glaze:
1/2 C sugar
1/3 C orange juice
2 Tbls grated orange peel
boil for 2 minutes, drizzle over rolls. I sprinkled powdered sugar too!
